DuPont’s new flagship dairy enzyme, DuPont™ Danisco® Nurica™, offers a new dietary solution for the roughly 65% of the global population who are affected by lactose intolerance[1]. Conventionally, many people with lactose intolerance use lactase-based products to break down the lactose, or milk sugar, that they consume into component parts that are easier for the body to absorb.

Nurica™ enables the galactose molecule to be naturally transformed into a prebiotic dietary fiber called GOS – galactooligosaccharides – facilitating up to 35% total sugar reduction. Research shows that GOS stimulates beneficial gut bacteria and contributes to increased mineral absorption and a sense of satiety, or fullness. Nurica™ can be stabilized in a variety of fermented dairy products, such as yogurt, sour cream, and more. This will allow more people to enjoy common food staples without negative health impacts.
